Hi Grant,
It was a pleasure to meet you today. Thank-you for taking the time to
serve us and take a personal interest in our needs.
Regina is blessed to have a Bakery run by a family so interested in
natural unprocessed products and specialty grains who is willing to
bake special orders for us and who will work with us on a one-on-one
basis.
The Organic Spelt Pumpernickel bread you gave us today is unbelievably
incredible!!!
We really want to get the nutritional breakdown for it. We are
concerned about it's salt level.
You will see lower down in this email how we estimated the
breakdown.......I am sure it is not accurate.
We want to keep our total individual daily intake of salt below
1200mg.
Helene will be in to pick up the Pita bread tomorrow
afternoon.......if you are able to email us the nutritional breakdown
for that bread as well, it will be very useful to us.
The diet we have started, the Engine 2 diet totally eliminates, meat,
fish, chicken, dairy and oils.
We recognize that we are certainly challenging you to bake with no
milk, no eggs, no cheese, no oils and very low salt.
We are amazed at how ready you are to help us, and how you are willing
to make our daunting task achievable.

Note...we were fasting this morning, thus no breakfast calories. We
had our blood tested for a lipid panel, to establish our starting
cholesterol points, amongst other indicators we are following.
The fats at lunch time were the healthy Omega 3 fats of ground
flax.....we are using up the dairy yogurt we have on hand, before we
switch to soy based yogurt.

We found some history on the internet about your fine bakery shop,

Neepawa to lose Prairie Seasons Bakery

closure and relocation of Neepawa’s Prairie Seasons Bakery
sometime next month, Neepawa’s loss will be Regina’s gain. After
serving organic and locally sourced food to Neepawa-area residents
for the last seven years, the Medina family will be moving their
nationally recognized bakery to Regina.
Rhoda Medina explained that their
time in Neepawa “has been a very, very fun time” but said that the
last few years have “been tough”. She explained that, “There’s
not enough business, we need a larger area.”
In Regina, the Medinas will be part of Dad’s Organic Market which
is an organic and natural foods superstore. With a butcher at one
end, they were looking for a baker. Medina explained that for the
last month, they have been sending bread there twice a week and it
has been well received.
At Dad’s, the Medinas will have a very small space and won’t be
operating a restaurant, all of their baking will be to-go.
The decision to leave Neepawa wasn’t an easy one and Medina said,
“We thought long and hard about it.” She continued saying, “I
enjoyed it [being in Neepawa] with all my heart and am very sad to
go. It’s sad because we have developed friendships with people
who enjoy and need our bread [and other baking].”
As for the future of a bakery in Neepawa, Medina is hoping they
can find someone to step in and rent the space. She explained
that they had someone lined up to take it over, but the deal fell
through due to health problems and she said, “We’re back to square
one.”
Prairie Season’s final day of operation in Neepawa hasn’t been
finalized but Medina said it will likely be July 15.

New Bakery Opening in Dad’s

REGINA – Dad’s Organic Market in Regina
will soon have a bakery. Expected to open in early May, the space is
being leased by Prairie Seasons Bakery of Neepawa, Manitoba.
The owners, Dan and Rhodo Medina and Grant and Rebecca Amundson are
closing their business in Manitoba and moving to Regina. The bakery
will feature bread made from locally produced grains and flours such
as whole wheat bread, spelt, oatmeal-raisin, and a light-sourdough
rye. “We have a granite mill and grind our own flour from organic
berries,” says Rhodo. All their product is made from scratch.
